Mayonnaise is one of those dressings that is very hard to perfect. The consistency isn't too hard to master with the help of a food processor but trying get the correct balance of seasoning for that great mayo taste is a different matter. Even if you've got it pegged the fridge life expectancy is low and it's unlikely that you'll be bothered to go through this arduous task every time you want a sarny. The problem we have with most shop bought mayonnaise is that the ingredients can sometimes be a little dubious - battery eggs, preservatives, Calcium Disodium, DTA!? Thankfully not all jars of mayo are the same. Tracklements source their Mayonnaise from an artisan, specialist producer in the Limousin region of France. They use only the very best ingredients including the yolks from free-range organic eggs and Dijon mustard and not an E number in sight. We've tried it and it tastes a darn sight better than the countless batches we've tried to perfect ourselves. We don't give up that easily though! Tracklements' mayonnaise is available in speciality delis, butchers and farm shops nationwide, a 275g jar costs only around £2.60. You can also buy the full the range of award-winning chutneys, relishes, sauces and mayonnaise via the website www.tracklements.co.uk |
