All of Tracklements mustards are made using both brown and yellow mustard seed in varying quantities to give the mustards their individual characteristics and qualities. As well as being used to make mustards, the mustard seed we source is used in a lot of our other products to give them that extra kick. As with all our ingredients, we are dedicated to ensuring our mustard is of the best quality as we believe this leads to producing the best taste. Due to the breadth of its use and since mustard is where Tracklements started, we are especially enthusiastic about is provenance.
For many years we tried to persuade British farmers to grow mustard seed for us but with no success. Mustard seed grows very easily and has amazing reproductive qualities. A handful, or 500g (7000 seeds), of mustard seed will produce 8 tonnes (5 000, 000 seeds) it its second harvest. Due to this it is virtually impossible to eradicate once planted in a field.
Finally, in 2003, a local farmer agreed to grow yellow mustard seed for us only two miles away from our factory. He had never grown mustard as a crop before so we had to guarantee a payment per acre whether or not the crop was successful. It was a success and now we receive all of our yellow mustard seed from this farmer.
The mustard seed that the farmer grows is the best quality, organic seed. This combined with our traditional recipes and handmade techniques ensure we continue to make products as good as the best homemade.
The advantages of using the whole seed come through when cooking with wholegrain mustard. It can happily be used at the beginning of the cooking of a dish without it losing its flavour.
