In 1999 Tracklements founder, William Tullberg, came across a recipe for Marmulate of Red Currants in Sir Kenelm Digby’s (1603-1665) cook book. Trialling, adapting and fusing the recipe with that of Michel Guerard’s 20th century "Marmelade d’Oignons" gave us Tracklements Onion Marmalade as we know it today.
Tracklements introduced the first commercially available Onion Marmalade to England in 1999. Three years later Trading Standards disputed the legality of using the word "Marmalade" to describe a product made from onions. They understood "Marmalade" to mean "Sweetened based citrus product" and consequently argued that Tracklements could not lawfully sell it under the name Onion Marmalade.
We presented numerous references in books dating back to 1699 containing references to Marmalades made from non-citrus fruits. Trading standards conceded that we could continue selling our now best seller as Onion Marmalade.
We source our onions, which we use in not only Onion Marmalade but many of our products, from a family run farm in Befordshire. It was founded in 1927 by the MD’s Grandfather.
The farm has adapted to modern farming techniques whilst retaining its integrity and family feel. Like Tracklements, they use the very newest technologies but are driven by making great tasting onions. They have been growing onions for 25 years.
This year celebrates the 10th birthday of our Onion Marmalade, which we still make to the same recipe using the same artisan methods as we always have.
