Warm Chilli Jam Chicken Salad

Pre heat oven to 180°C Mix all the marinade ingredients together in a deep dish and then place the chicken in the mixture to marinate for a minimum of an hour. Meanwhile, cut the potatoes and peppers into inch squares and toss them in a little oil in a roasting tin and season with salt and pepper. Cover and cook the chicken on the middle shelf of the oven and roast the vegetables on the top shelf for approx 25mins or until cooked. Put the salad leaves into a serving bowl and mix in the roasted vegetables and chicken, then pour over the juices from the dish. Mix well and serve warm with a Ciabatta. |
