Gently Spiced Meatballs

Directions

Pre heat oven to 350°C

Mix the mince, bread crumbs, salt and pepper and eggs together and form meatballs in whatever size you prefer. Then bake in a covered casserole dish for 35 mins. Drain off any excess fat.

Meanwhile, melt the butter in a large pan and sauté the onion & garlic until soft. Add the flour, stirring constantly and cook for a further minute. Gradually add the boiling stock and whisk into a smooth texture. Pour over the meatballs and cook uncovered for 20-30 mins, then add the chutney and return to the oven for 5 mins. Serve with Basmati rice.

For the meatballs:

1kg mince

50g breadcrumbs

salt and pepper to taste

2 eggs - beaten

 

For the sauce:

75g butter

1 large onion - chopped

1 clove garlic - crushed

2 tbsp flour

500ml stock (beef or vegetable)

6 dsp Tracklements Curried Fruit Chutney
