Pancakes with Vanilla Ice Cream, Apple & Cider Brandy Sauce and Shortbread Crumble Pieces
Makes: Roughly 12
- 100g plain flour
- 2 large eggs
- 1 tbsp sunflower of vegetable oil, plus a little extra for frying
- pinch salt
- 300ml milk
- 2 tbsp maple syrup
- 8 tbsp Tracklements Apple & Cider Brandy Sauce
- good quality vanilla ice cream
- shortbread biscuits, crumbled
In a large mixing bowl combine the flour, eggs, oil and salt. Add the milk little by little whisking all the time until the batter is smooth.
Heat a little oil in a large frying pan. Put a small ladle of batter in the pan, move the pan to spread it out into a circle. Cook for around 1 min before flipping and cooking the other side.
Put on a plate. Stir the maple syrup into the Tracklements Apple & Cider Brandy Sauce.
On the plate, top the pancake with a large scoop of good quality vanilla ice cream, Tracklements Apple & Cider Brandy Sauce mix and shortbread pieces.
