Pork Skewers with Sticky Barbecue Sauce

The perfect barbecue food whatever the weather, sticky and tender pork on skewers.

Method:

In a large bowl mix together the soy sauce, lemon juice, garlic and Sticky Barbecue Sauce. Stir in the cubed pork pieces. Cover and put in the fridge for at least an hour or overnight for a deeper flavour.

Meanwhile, chop the peppers and onion, put in a bowl with a good glug of oil, toss to coat and then thread onto skewers.

Once marinated, thread the meat onto separate skewers. Cook all skewers over hot coals on a smoking hot grill for 3 mins each side or until cooked through and nicely charred.

Brush the skewers with extra Sticky Barbecue Sauce during the last few mins for a sticky glaze.

Serve hot with grilled corn, potato salad, or flatbreads. Garnish with fresh herbs.

  • 1 tbsp light soy sauce
  • 1 lemon, juiced
  • 1 clove garlic crushed
  • 4 tbsp Tracklements Sticky Barbecue Sauce
  • 500g pork leg or shoulder cut into 2-3cm cubes
  • 2 mixed peppers, cut into pieces
  • 1 red onion, cut into wedges
  • 1 tbsp olive oil
  • 8 metal or soaked wooden skewers
