Preheat the oven to 170°C/ 325°F/Gas mark 3.
In a casserole dish, brown the sausage pieces in a little olive oil and then take them out of the dish and put on one side.
Fry the onion and garlic gently for 5 mins, then add the peppers and continue to fry gently for a further 5 mins. Return the sausages to the casserole dish along with the tin of tomatoes and the stock, bring to boil, take off the heat.
Add the beans and the Quintessential Brown Sauce and cook in the oven for 1 hour (or continue to simmer on stove top for 40 minutes.)
Decorate with the parsley and serve with crusty bread.
