Veggie Pitta with Falafel, Salad and Green Tomato Chutney

Method:

Toast the pittas. Cut open to create a pocket and spread a good helping of hummus on the inside. Squash the falafel with a fork and add to the pitta. Add slices of tomato and cucumber and add a couple of tablespoons of Green Tomato Chutney. Finish off with a squeeze of lemon (or lime!) and sprinkling of coriander.

Makes: 2

  • 2 x Pittas
  • 6 x Falafel
  • 1 x Tomato
  • 3 inches of Cucumber cut into rounds
  • Handful shredded iceberg lettuce
  • 4 tbsp Green Tomato Chutney
  • Squeeze of lemon
  • Sprinkling of coriander
