Slice pre-cooked chicken breast, tear mozzarella into small pieces and mix them together.
Add sweetcorn, thinly chopped spring onions and Rocket Hot Sauce.
Place the filling on one half of tortilla, and then fold it in half.
Place quesadilla in a dry skillet over medium heat, cover with a lid. Once one side is crispy, flip the quesadilla and repeat the process.
