These terrifically tasty tacos are more than moreish and won’t have you slaving over the stove for hours. Ready in minutes, this Mexican inspired feast makes for the perfect weekday dinner.
Assemble your protein filling of choice. With a fork, lightly mash the avocado and add a small squeeze of lime to keep it from browning. To create the pico de gallo, finely chop the red onion, tomatoes and coriander and mix together in a bowl with a squeeze of lime and a pinch of salt. Add your protein filling, a spoonful of sour cream, avocado, Tracklements Cucumber & Sweet Pepper Relish and the pico de gallo to the taco shell, and enjoy with a cold brew.
